Bread 2

Since i figure no one is going to be reading this over the weekend, i am just going to fill the whole thing up with whatever i feel like at the moment. The first thing being this second loaf of bread i cooked. It is shapelier due to me making a pizza peel from cardboard, and it appears to have fallen less. the crust is also harder. i can see this whole thing becoming a serious obsession.

The bread came out much more uniform this time around. There was no gumminess in the bottom of the bread, and the air pockets were spread out much more evenly. The flavor was also perfect. i need to work on the shape a bit, but overall this was much better than i expected on my second attempt.

  2. I’ve never seen a loaf of bread with that profile, you’re an innovator.

  3. The basket is a little too small for the loaf, so there are folds on the bottom from where it gets smashed. Once in the oven the folds expand, and the bread turns out like that.

    Or i intentionally did it. Either one works.
